Slice Lion’s Mane mushrooms into ¼ inch slices. Heat olive oil in a cast iron skillet over medium heat. Sear mushrooms for 3 minutes per side before removing and draining any excess liquid. Shred by hand once cool enough to handle. Dice onions and celery into ¼ inch cubes. In a medium mixing bowl, stir onions, celery, vegan mayonnaise, and lemon juice. Season with garlic, salt, pepper, and paprika, then whisk in Lion’s Mane until fully incorporated. Serve on a toasted roll.
