Ingredients

  • 1 pound Lion’s Mane
  • 1 cup cornstarch
  • 1 tablespoon cornstarch
  • ½ tablespoon water
  • ½ cup orange juice
  • ¼ cup sugar
  • 3 tablespoon rice vinegar
  • 2 tablespoon soy sauce
  • 1 tablespoon ginger - finely chopped
  • 1 teaspoon crushed red pepper
  • 1 tablespoon garlic - finely chopped

Preparation

Cube Lion’s Mane into 1 inch cuts. In a small saucepan, heat water and 1 tablespoon of cornstarch. Add orange juice, sugar, vinegar, soy sauce, ginger, red pepper, and garlic. Stir constantly until it forms a thick sauce. Heat oil in a separate frying pan, coat all cooked Lion’s Mane cubes in cornstarch, and saute Lion’s Mane cubes until browned on all sides. Remove to a plate covered with paper towels to drain oil. Once fully cooked, add to orange sauce, coat, and serve over rice.
