  • 1 pound Lion’s Mane
  • 1 flax egg
  • ½ cup soy milk
  • 1 cup flour
  • 1 tablespoon smoked paprika
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoon garlic powder
  • corn starch
  • olive oil


In a small bowl, mix egg and milk until blended. Using another bowl, combine all dried seasonings with flour until incorporated. Slice Lion’s Mane into ⅓ inch sections, then pat with a paper towel until dry. Pour corn starch into a shallow plate. Dip mushrooms first into the cornstarch to fully coat, then into the egg mixture, and finally into the flour mixture. Set on parchment paper and repeat until all mushrooms are covered. Heat oil on low-medium heat. Using tongs, place Lion’s Mane into the pan, careful not to crowd. Cook about 4 minutes per side, or until golden brown and crispy.
