  • 1 pound Lion’s Mane Mushrooms
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons gochujang (Korean red pepper paste)
  • 2 tablespoons gluten-free soy sauce
  • 1 tablespoon honey
  • 2 teaspoons sesame oil
  • 2 tablespoons vegetable oil
  • 1 tablespoon toasted sesame seeds
  • green onions, thinly sliced (optional)

Preparation

Rinse the Lion's Mane mushrooms under cold water. Pat dry with paper towels. Use a sharp knife to slice the mushrooms into bite-sized pieces.

For the sauce: In a small bowl, whisk together the gochujang, soy sauce, honey, and sesame oil. 

In a wok or large skillet, heat the vegetable oil over high heat. Add the sliced onion and minced garlic and stir-fry for 1-2 minutes, until fragrant.

Add the Lion's Mane mushrooms to the wok and stir-fry for 5-7 minutes, until they release their moisture and start to brown.

Pour the sauce over the mushrooms and onions. Stir to coat evenly. Stir-fry for an additional 2-3 minutes, until the sauce has thickened and the mushrooms are well coated.

Sprinkle the sesame seeds over the top and toss to combine. Serve hot and garnish with thinly sliced green onions, if desired.
